Straw-pple Sauce!

I think you are beginning to notice that I am enjoying myself more and more in the kitchen.  In fact, after a long day at work, I enjoy getting some time in there to be creative, expressive, and try a few new things.

This week Straw-pple Sauce was born!


It's not a 100% unique idea.  Strawberry-Applesauce has been around for some time. 

Just the same, I like to think that I am breaking new territory, because 1) I haven't made applesauce often, 2) I never used a blender to smooth my sauce, and 3) this is the first time I have added strawberries!

Let's see what craziness unfolded...

I got a nice big pot.


And two types of apples.  Four Granny Smiths and six Fuji's.



My helper was at the ready offering her assistance!

I always joke about this... I am secretly on a show called, "Cooking with Katie."  She is my trusty assistant for things like creative ideas, clean up, and of course tasting!


Since I was making a small batch and since I don't have a Foley mill (fancy thing to remove skin and seeds from a cooked down pulp mixture), I peeled, cored, and chopped all the apples. 

Those pieces went right into the big pot.



Next up... strawberries!!  Same deal here; clean and slice.  I used the whole carton of strawberries.



My helper has a special admiration for strawberries!

"Who me?"


Then the strawberries were added to the big pot and the pot was placed on the stove.


I did add some apple juice and water to the fruit to prevent the bottom from burning and helping the pulp to break down.

A quick stir later and we were in business!


As it bubbled, the kitchen became filled with the autumn smell of apples.  If we could have smell-o-rama blogs, this would definitely be the post I would use it on. 

Can you smell the cooking apples now?


Once I was satisfied that the mixture was cooked through, I transferred it to a mixing bowl.


Then scoop by scoop, I added a batch to the blender and gave it a few whirls to "sauce-a-fy" it!


Once all the mixture had gone through the blender it looked so smooth and yummy!!


This is the part where you season it to your liking.  I decided it was sweet enough, so no sugar was added.  I did add cinnamon and nutmeg.  YUM!


It's funny how more of the red color from the strawberries came out while I re-heated the sauce for canning.

I took this as a chance to practice my canning skills.  This was the first time doing it on my own.  I followed the instructions to re-heat the sauce to boiling and to heat the jars, lids, and rings.


Filling the jars was hot, messy, and nerve-wrecking.  But I got through it. 

A reward for my efforts?  A nice big bowl of Straw-pple sauce that didn't fit in the jars.


My assistant was spent.  Done. Tired.  Zonked.  Wiped.


Although, I bet if I had said the word "apple," she would have jumped up on fresh legs ready to do the whole thing over.


And here we are...

...a fun night spent in the kitchen.
...amazing smells throughout the house.
...a few jars of tasty sauce to brag about and scarf.
...a quieter mind that is much less focused on stresses.
...a happy assistance with a belly full of apples and strawberries.

Flower Round Up

It's been a tough NY summer for the flowers ... which means I haven't taken a lot of garden pictures lately, so this feels well over due.  Looking through everything I only have a few things blooming.  The funny thing is... that means they have all they attention, don't they!

Go grab a cup of tea and lets go for a walk in the garden!!

This is a purple African Violet which is thriving!


What was left of my Black Eyed Susan's after they were mostly eaten by a bunny.  At least the bunny was kind enough to leave me one blossom.  And now, after a few weeks, I have have a few more coming along too!


The last of my Red Bee Balms!  Don't they look like cool odd planets?  The humming birds really enjoyed these this year.  I had no idea I was going to have so many humming birds around the new house!


I this this is some sort of Silver Lavender -- which has been amazingly deer, bunny, and drought resistant.  I'm sure a more panned out picture would help with identifying it, but I couldn't resist getting a picture of this little bumble bee hanging out on it.


I planted this Red Mum last year and it come back to my delight!  I actually planted three.... purple, red, and orange.  The red and orange survived the winter.  Both are heavy now with buds.  And I have to laugh, because the red mum has been slowly opening a few buds over the last 3-4 weeks.  They are so pretty!

This is most certainly a weed of some sort.  I have to admit that I haven't been weeding much lately.  And every hint of color counts, right? 


This flower (go ahead and laugh) makes a very rare appearance in the garden when the sun is shinning just so!

"Who me?  Who are you calling a flower?  Momma, I'm trying to catch a quick nap here."

"Ok, if you must point that thing at me, at least get me from my good side!"

You've Got to Smile

I was looking through my draft blog entries this morning and found these cupcake pictures just begging to be posted!  I still in shock that I haven't put these up yet!!

These are the Cocoa-Strawberry Cuppies that I made for my birthday (two weeks ago -- where has time gone?)


I took a chocolate base and made it more rich by adding extra cocoa and a pinch or five of cayenne pepper.

Then I topped these sweet delights with a homemade strawberry buttercream. 


I didn't follow any specific directions. Or rather, I didn't follow them well.

My buttercream ended up being a little more runny than I had hope, but it was jam packed with flavor and real bits of little diced strawberries!  Not bad for only the second time of making homemade buttercream.

A blueberry made the perfect topper to finish them off!

I can still taste the moist cake and sweet frosting now. 

I'm still kicking myself for not throwing a few in the freezer for a later date; maybe I'll remember to do that next time around!

A Wee Bit of Hair

I sat down with my pad last night and drew a total blank on the latest Creative Tuesday's theme, "hair."

My thoughts jumped from hair bands, to that crazy hair stylist show on where they make outrageous up-dos, and then to Katie's hair.  Then I remembered she has fur, not hair.  doh!

I let my pencil do the thinking for a change and here is what I came up with.

I bet you didn't see that coming.  I know I didn't!

This little piggy is singing "wee, wee, wee," all the way to Mr. Toasts Creative Tuesdays!

He's certainly a happy little piggy!


Not sure if you noticed, but I even pulled out my bigger sketch pad this time around. 


This little guy is created with a pencil outline which I then added color to with color pencils.  For the extra sharpness I used my ink pen very lightly to give him highlights and deep rich eyes.

Anyone have a brush we can borrow to straighten this guys mane out?  hahaha


Hope your Friday is a blast and if you need a pick me up... just think of the cute little hairy pig.  It's certainly putting a smile on my face!

It's Hard to Believe...

... I have left this space blank for so many days.
... the amount of rain we have gotten in NY over the last five days.
... that my little brother is another year older (and not really so little any more).
... that I absolutely can't put down the book I'm reading.  I highly recommend "Three Cups of Tea"
... that Mr. Happy and I managed to hike for four days in a row with Katie before the rain settled in.
... I have a three day weekend coming up.
... August is nearly over and I'm not ready for summer to end.
... that my tomatoes are growing very big, but not turning red yet.
... that we had turkey vultures in the yard again -- eww!
... the fortune I got from a fortune cookie fit me perfectly!
... I might paint a chair to be auctioned off for charity.

Yes, happy things have been happening.  I'm hoping to sit down this weekend and take the time to share a few of them!

Happy Under the Sea Day

I have been working on my Creative Tuesday entry for the "Under the Sea" theme, hosted by the lovely Mr. Toast, for the last week!

(sorry for the terrible picture lighting!!)

It makes me giggle when I work on it. 

It makes me laugh to think of what these two charaters would say if I met them.


And, I have taken for. ever. to finish coloring it.  for. ever!

But here it is.
